The Schild Estate Barossa Valley Cabernet Sauvignon is a genuine expression of this great variety from a select and particular part of the Barossa. Our quest has been to produce a wine with great varietal definition and a real sense of place.Winemakers Notes2012 was a one of those wonderful years where mother nature provides the kind of climatic conditions that sees both winemakers and vignerons get excited.We saw sufficient, but not excessive rainfall which fell at the right times. There was also a lack of excessive heat. These combined ensuring that the ripening cycle was slow and deliberate resulting in great fruit depth, structure and balance to many of the wines produced from this year.ColourDense with dark purple huesBouquetDeep and controlled with fresh, crunchy dark fruit supported by subtler secondary notes of cedar and sandalwood which provide a restrained edge to the wine. Ends with just a faint hint of classic Cabernet perfume to provide a clue at variety.PalateAttractive creamy dark berry compote fruit is supported by a fresh and a focused line of travel through the palate.
